Gas interlock systems in commercial kitchens are a legal requirement and your insurance will almost certainly be void without one.
What is a Gas Interlock System?
Gas Interlock Systems are mandatory for most commercial kitchens, designed to automatically cut off the gas supply in the event of a fan malfunction. These systems also ensure that the airflow rates achieved by commercial kitchen extraction systems comply with the minimum standards outlined in DW/172, which specifies the requirements for kitchen ventilation systems.
The operation of gas interlock systems involves monitoring the functionality of the fans within the ventilation system, which can be accomplished through two primary methods. The first method employs a differential air pressure switch that detects the pressure difference on either side of the fan (intake or extract). This switch can be calibrated to various sensitivity levels to ensure a shutdown occurs at the desired air throughput. Alternatively, an electrical current sensor may be utilized in place of the air pressure switch, which tracks the electrical current supplied to the fan to achieve the same result. Current monitors can be provided as standalone devices or integrated into certain gas interlock control panels.
The gas interlock panel is linked to a suitably sized normally closed gas solenoid valve, ensuring that the gas supply to the kitchen remains shut off at all times, except when the kitchen extraction system is functioning properly. Gas solenoid valves are available to accommodate various pipe sizes; however, it is essential to consider the pipe material, as, for instance, black iron pipework has a smaller bore than other types.

Do I need a gas interlock in my kitchen?
UK law requires all commercial kitchens to have a working gas interlock system installed. You must adhere to this legislation if your kitchen has:
- a power-operated flue system for a gas appliance
- a new ventilation or extraction system
- a new gas-line pipework or kitchen layout
- any category B appliance (e.g. combi-oven, grills, griddles or fryers)
If you have failed to install one, you may face prosecution by the Health and Safety Executive – which may result in kitchen closures and serious fines.
